I love eating fried rice and sometimes I don’t have time or the desire to cook meat, so fried eggs are the perfect solution! You can decide also to scramble your eggs instead and serve them on top of your rice. You want to add veggies? That’s the great idea because you then have a very balanced meal.

Servings: 1

Preparation time: 15-30 minutes

Ingredients:

• 1 large egg

• 1 cup brown rice or white rice

• 1 cup mixed peas and carrots (cooked medley frozen or forma can)

• 1 Tbsp. soya sauce

• ½ tsp. garlic powder

• 1 tbsp. olive oil

• 1 tbsp. minced fresh parsley

Method:

In a large pan, heat the oil and the soy sauce, cook the garlic and fresh parsley for 5 minutes.

Add the rice and the cooked peas and carrots.

Continue frying in the pan for another 10 minutes.

Then, set some rice aside in the pan and cook an egg.

When serving, serve with the fried egg on top.

Reheat before eating of course if needed.

Make sure you season the egg with salt and pepper and bring a pack of hot sauce if you wish to add spiciness to this delicious meal.
